Ultra Music Festival came and went, making today’s Monday blues stronger than ever. Cheer up with Byblos’ special menu celebrating the Persian New Year. Wednesday, hang out with James Beard Award semifinalists at Bazi during a collaborative dinner honoring South Florida’s nominees. End the week at Bucks Beer Garden at the Raleigh, bringing a bevy of eats, drinks, and games.

Byblos Celebrates the Persian New Year
In honor of Nowruz, also known as the Persian New Year, Byblos offers a special four-course prix fixe highlighting Eastern Mediterranean delicacies. Menu items include eggplant rolls with braised lamb; kookoo sabzi, a Persian frittata made with organic eggs, herbs, and sumac; pan-fried branzino with harissa and rose; and pavlova, a meringue cake with vanilla labnah, raspberries, and apple jelly. TUESDAY

Sake Dinner at Bazi

Bazi Hosts Dinner Soiree with Miami’s James Beard Award Semifinalists
Chef Michael Pirolo, a James Beard Award semifinalist for Best Chef: South, will host a collaborative dinner with his fellow South Florida nominees. Taking place at Bazi, Pirolo’s Asian restaurant in Miami Beach, the soiree will feature a cocktail reception with hors d’oeuvres, followed by a dinner whose multiple courses will be executed by a different chef. Joining Pirolo in the kitchen will be Alter’s Brad Kilgore, Pubbelly’s Jose Mendin, Eating House/Glass & Vine’s Giorgio Rapicavoli, and NIU Kitchen’s Deme Lomas.     Cruisers’ taste buds are more adventurous and restless than ever before, demanding the same quality and variety they can get on land. Cruise lines are answering the call (and their reply is delicious). While the cruising industry might be a year or two behind the food trends you’ll find on dry land, you’ll be impressed by what’s cooking onboard cruise ships these days. Gastronomic dreams like farm-to-table dining, cutting the lines at the hottest global gathering spots for gourmands and getting your hands dirty with meal prep in the kitchen are real culinary options onboard cruise ships currently plying oceans and rivers worldwide.

     

    Get acquainted with the latest culinary offerings at sea with these five cruise food trends.

     

    1. Locally (and Responsibly) Sourced Food

    People want to know where their food is from, and on land, they’re paying for the privilege. The farm-to-table (or market-to-table) movement brings local, sustainable and mostly organic products from local producers to homes and restaurants. Items are typically intended to be prepared within a short timeframe from purchase — preserving their integrity. Market fare is not only considered to be fresher, but also healthier. This trend is taking to the sea, with more cruise lines sourcing ingredients from local vendors in ports visited. This can be a sizable feat on a cruise ship in the middle of the ocean, especially considering how many passenger meals a chef onboard might have to prepare for: hundreds to thousands each night. Due to a smaller passenger base and a high standard of excellence, luxury and river cruise lines are the most likely to offer such local cruise food menus. The chefs onboard Uniworld Boutique River Cruise Collection source seasonal produce and inspiration from the markets they visit, bringing those flavors to cruise passengers with wine pairings and even the opportunity to accompany a chef to a local market as part of a shore tour. Similar experiences are available on Oceania Cruises and Viking Cruises.

    On the cruelty-free front, Royal Caribbean Cruises Ltd., which operates six cruise brands internationally, and Carnival Corporation, with its 10 brands, have committed to using 100 percent cage-free eggs by 2022 and 2025, respectively. Royal has further committed to sourcing pork from vendors using gestation-free crates by 2022.

     

    2. Upgraded Bar Bites

    Just because you want to grab a casual drink, doesn’t mean you’re interested in a communal bowl of peanuts. As on land, at-sea bar- and pubgoers are no longer satisfied with a simple, salty snack and cruise ship bars are responding with some downright gourmet takes on pub food, providing snacks that can stand alone — no booze required. You can nosh and imbibe with panache on your next cruise, without leaving your barstool. On Norwegian Escape, for instance, all of the 74 mostly craft beers at the ship’s District Brew House can be accompanied by the gastropub-style fare from Food Republic, just across the hall. Similarly, order a glass of wine at The Cellars on Escape and small plates like Iberico ham and Manchego cheese are provided by Pincho, a tapas bar designed by Iron Chef Jose Garces. Princess Cruises features the Salty Dog Gastropub, a space inside of the Wheelhouse Bar, on select ships. The menu offers droolworthy dishes such as spicy stout short ribs, lobster mac ‘n’ cheese and the piece de resistance — “The Ernesto burger” from Chef Ernesto Uchimura of Umami Burger (a ribeye and short rib beef patty, grilled pork belly, caramelized kimchi, beer-battered jalapenos and charred onion aioli, topped with cave-aged Gruyere cheese).

    The bad news: the cool less-humid months are almost over. The good news: spring will bring some pretty great new restaurant openings around Miami. Among the many things to look forward to: pop-ups finally getting brick-and-mortar locations, one of Brooklyn’s most famous pizzerias setting up shop on Biscayne and healthy options that promise to be delicious too. Below, the 13 most anticipated newcomers to check out this season.

     

    Local Stars Look to Expand their Reach

     

    Now that nightlife impresario Jason Odio and chef Michael Beltran (pictured) have mastered New American fare at Ariete, they’re turning their attention to craft cocktails and late-night snacks with Baby Jane, their forthcoming restaurant and bar in Brickell. Set to open this spring, Baby Jane, meant to feel like a bungalow, will feature a laid-back vibe, housemade bites (think duck and foie gras croquettes and grilled wings), plus local beers and inventive cocktails. 500 Brickell Ave.

     

    The first Miami location of the growing Florida chain Dragonfly Izakaya & Fish Market is expected to open in April, bringing an omakase menu, robata fare, a noodle bar and a boutique fish market to Downtown Doral. 5241 NW 87th Ave.

     

    The Pubbelly boys are at it again, this time with PB Station, a seafood-and-steak joint set to open this month within the Langford Hotel. The restaurant will offer shareable dishes with U.S. and Latin influences. 121 SE First St.

     

    Chopped champion and Eating House chef Giorgio Rapicavoli is at the helm of Glass & Vine, a new restaurant set to open in Peacock Park any moment now.     This Miami Beach restaurant’s success is due to fair prices, delicious cuisine, and excellent service.

     

    When he lived with his parents in Puerto Rico, Jose Mendin’s mother did all the cooking. Since moving out, he’s learned how to cook for himself. And he does it very well. After working in various restaurants, and taking several internships, particularly in Spain, he created Pubbelly, with associates, in 2010. This was followed by Pubbelly Sushi the following year.

     

     

    In this district under renovation — best to work out your itinerary before you head out—he combines Asian and American influences. His proposals are often very original and delicious. Try the duck ravioli, pork ribs, or octopus à la plancha, and you’ll be conquered. Very good desserts complement the main courses.

     

     

    Add a friendly atmosphere, attentive service, and reasonable prices, and you’ll understand why the restaurant is so successful. Indeed, numerous gastronomic prizes have been awarded to this talented chef.

    StarChefs restaurant industry magazine names Florida Rising Stars Award Winners, says locals are driving the restaurant scene away from the beach and into the mainland

     

    StarChefs, a restaurant industry magazine, has announced its 2016 South Florida Rising Star Awards, “honoring up and coming chefs and hospitality professionals, who represent the vanguard of the contemporary American dining scene.” The magazine sent scouts from the Keys to Jupiter, visiting, they say, over 100 chefs, pastry chefs, bartenders, sommeliers and more. No bathroom attendants though.

     

    “Wynwood and the Biscayne Corridor have supplanted South Beach as food destinations—even Coral Gables and Downtown have emerging scenes,” said Antoinette Bruno, CEO and Editor-in-Chief of StarChefs. “It’s a sure sign that locals, instead of tourists, are driving restaurant business, and they’re making it possible for young chefs to build successful, community-oriented businesses.”

     

    “There’s no defining cuisine at the top of the market,” said Will Blunt, managing editor of StarChefs. “Whether it’s traditional Vietnamese or high-end and conceptual, the best food in South Florida is personal. It’s not trendy or derivative — and it has attitude.”

     

    The winners will be honored at the StarChefs Rising Stars Gala on Wednesday, April 13 at Marlins Park (!), beginning with an awards ceremony at 6:30 p.m. and followed by a tasting gala from 7:15 p.m. to 9:30.p.m.

     

    A portion of the ticket sales will be donated to Feeding South Florida, a nonprofit food bank that distributes more than 40 million pounds of food per year. More than 98 percent of all donations are put back into the community. Learn more at feedingsouthflorida.org.

    Snowbirds. They invade our beaches during the cool months, hogging parking spaces and snagging the good seats at our favorite restaurants. This is their season in Miami, and while we may not be able to help much with the parking situation, we can at least suggest 10 tasty spots where you’ll find a locals-heavy crowd.

     

    Sylvano’s
    Blink and you might miss this Italian spot just a block off Collins Avenue. It serves Italian antipasti, pizza and homemade pasta and a great selection of regional wines for a reasonable price, making it a rare gem given its location. The staff is mostly Italian and very friendly, and there’s always a row of chatty locals drinking at the bar. The lush patio feels miles away from South Beach’s hustle and bustle.

    Pubbelly
    This Sunset Harbour gastropub got some good exposure when it opened a few years ago, but the buzz has quieted a bit with all the hot new arrivals in the area. But its menu of Asian-inspired, pork-centric small plates is still a solid choice for a bite before a night of drinking at nearby bars and clubs. Note: its sister property Pubbelly Sushi, located right next door, is always a good bet too.

    What: New York’s famed Employees Only mixology team, Dev Johnson and Uros Miljkovic, will team up with Derek Stilmann and Ryan Vando of the soon-to-be-opened Langford Hotel rooftop bar, Pawnbroker, for an afterhours, speakeasy at Pubbelly. Bar bites by Chef Mendin and $15 made-to-order cocktails will keep guests going until 2:45 a.m. when the last call, Employees Only tradition of serving homemade chicken soup will be passed out to all, on the house.

    Crash the Kitchen
    When: Seatings from 6 pm to 11 pm
    What: Crash the Fire Kitchen – Carnivores Only!, a not-to-be missed chef collaboration between Francis Mallmann of Los Fuegos, Paul Qui of Pao by Paul Qui at The Dome and Gabriel Ask, Executive Chef of Faena Hotel Miami Beach. Offering a special menu available to the public for one night only.
